{Fresh Corn Salad}
2 tsp olive oil
1 tsp red wine vinegar
1 tsp lemon juice
1/2 tsp crushed garlic
dash fresh ground pepper
dash basil
dash parsley
1 1/2 cup fresh or frozen corn
1/4 cup sliced cherry tomatoes
1/4 cup shredded cheddar cheese
2 tbs sour cream
Mix all ingredients together.
Refrigerate until cold.
Add on top of a plate of fresh greens (I prefer romaine lettuce).
Serve with quesadillas.
